Champagne is a sparkling wine whose name is used only in regard to the wine produced in the province of Champagne. Champagne is made either from one of the following kinds of grapes, or from their blend: Chardonnay, Pinot Noir, Pinot Meunier. There also exists quite a long list of requirements defining the main aspects of grape cultivation. The beverage can bear the name "Champagne" only if the wine meets all those requirements. Champagne or the light sparkling wine has a history of about 350 years. As it can be assumed from the name, the wine was introduced in France and it was the province of Champagne that became the main region of its production. 1668 can be considered the exact date of the first emergence of this splendid wine with gas bubbles. It was then, that the Canon of the Cathedral of Reims, priest Goddino gave the following description in his church book “An almost white wine of light coloring, saturated with gas”. Several decades later France witnessed a real boom of sparkling wines. Champagne became fashionable, which stimulated its production and improved the technology.
